I would definitely recommend staying away from oil-based finishes on spalted maple....it *heavily* mutes the colour contrasts and turns the creams and whites to a uniform brown...and tends to blur the black spalt lines. Water based, shellac, or lacquer with a good sealer are my order of preference.
